Brown Rice Stuffing

Brown Rice Stuffing

Serves 4

1 tablespoon "Take Control" margarine
1 small white onion, chopped
1 clove garlic, minced
1/4 pound fresh mushrooms, sliced
1/2 tsp curry powder
1/2 brown rice
2 tablespoons raisins
1 cup plus 2 tablespoons low sodium chicken broth
2 tsp grated orange peel

Heat margarine in skillet, stir in onion, garlic, and mushrooms and cook briefly. Stir in curry powder. Add rice and saute for 2 minutes. Stir in raisins and broth. Cover skillet and bring to boil. Reduce heat and simmer 45 minutes until rice is tender. Add grated orange peel and fluff.

Each serving: 143 calories, 25 gm carbohydrate, 4 gm protein, 3 gm fat
