Pumpkin Pecan Bites
Recipe adapted by Marilyn Dougherty, RD/LD

1 cup whole wheat flour
1 cup oat bran
3/4 cup brown sugar
3/4 tsp. baking soda
2-3 tsp. pumpkin pie spice
1/2 cup canned pumpkin
1/4 cup honey or molasses
40 pecan halves
In large bowl combine flour, oat bran, brown sugar, baking soda, and pumpkin pie spice. Stir well. Add pumpkin and molasses and mix well.
Roll dough into 1 inch balls and place 1. 1/2 inches apart baking sheet that has been sprayed with cooking spray. Press pecan half in the center of each cookie and flatten the dough slightly.
Bake at 300 for 15 minutes, until lightly browned. Cool on the pan for 1 minute. Transfer to cooling rack.
Yield: 40 cookies; 49 calories, 1.2 gm fat, 1 gm fiber.
